Nicole Cooke is a good shout, only female so far, and Welsh to boot! Victoria Pembleton is another Cyclist, whom is sucessfull but gets not much attention,
Phil" The Power" Taylor would be a legend if he was on the beeb instead of sky. Peter Nicol also springs to mind, he was Squash No. 1 for a long time but hit the headlines big here north of the border when he switch from Scots to English, claiming lack of funding.
