I Have somebody using my exclusive on websites and I obviously want to make them stop doing so. I am about to ask very politely for them to stop but I have two question's to ask.
1) Does anybody have a copy of a letter that I may be able to use if they fail to respond ?
2) What would people say is a reasonable period of time to allow them to remove my content ?

I would say that you have a few options.
One is to email and give them 24 to 48 hours to remove your content.
Another is to send them an invoice for "Unauthorised Use" of your content (don't go too silly with the amount you charge on the invoice though). You should be able to find where to send an invoice by looking the website up on "Whois"
And finally, if the above fails you can send them a DMCA Notice. If they do not respond to that then send a copy of it to their "Domain Server Hosts" (should also show up in a "Whois" search). A "Domain Server Host" is much more likely to take notice of a DMCA Notice and may, if necessary, take the entire website down.
Some typical wording for a "DMCA Notice" is below (you may have to slightly alter it to suit your particular situsation).

Sender Information:
[your name, your company name, email and address]
Recipient Information:
[who you are sending the notice to]
Sent via: Email or Post

I hereby demand that you act expeditiously to remove or disable access to the material or items claimed to be infringing.

Allegedly Infringing items or materials:
Pictures taken from website
Infringing material that I demand be disabled or removed in consideration of the above:
