Option 1 looks best to me as you just want images, profile,etc and it's kept nice and simple.

yep option one is better for people who just want things simple but I think models would like there own blog and page link so they can upload there latest shoot stories etc.

You will have far more flexibility, and for somebody to have there own subdomain are big bonus's/selling points.
Arnt you able to re-skin the default admin area to your liking to match the rest of the site?

Surely reskinning the dashboard wouldnt be THAT much of a ballache?
Find the right folder within /wp-admin/, there will only be 1 or 2 main theme files... Maybe? And just changing colours and icons.
