Well, going way back I would have to say Ingrid Bergman, not a conventional "sex symbol" but she does it for me. Especially in Casablanca. Or a more conventional sex symbol, Jane Russell in her cantilever bra apparently designed by Howard Hughes.

As for modern day, Gemma Arterton floats my boat. She was in Quantum of Solace, the Tamara Drewe film and on the Beeb as the lead in Tess of the D'urbervilles. A rather attractive young lady.......
