McDonald's is a very poor example as their business operation is clearly completely different from Pizza Hut. Nandos is a better example, and they do make everybody pay first whatever your ethnicity, sexual orientation or age. My objection to that way of working is if I decide later in the meal I want a pud, I wouldn't want to have to go through the credit card bit again.

Agreed, Nandos is a better example.

The way they operate though is the template for how Pizza Hut is going to have to operate if they are going to ask customers to pay up-front.

They ask everybody to pay up-front or no-one to pay up front.

If they ask certain customers to pay up-front and others not to pay up front, they leave themselves open to accusations of discrimination.

I agree with what you say about the pud, but the answer is to go elsewhere if you don't like the way that restaurant operates.
