Or perhaps certain other group behavioural characteristics led to that conclusion, and skin pigmentation didn't play a part at all?

Don't you think the Restaurant Management were a bit dim to ask for the money up front from the Black group and then allow the next group of customers (who happened to be white) to pay after the meal?
Whatever the "behavioural characteristics" of the groups they left themselves open to accusations of racial discrimination.
They only way they can ensure they avoid accusations of discrimination is to ask for the money up-front from everyone or no-one.
That's why Pizza Hut are in the hole they are in.

The threshold for that has always been ridiculously low, though.

I disagree.
He can cover his back by asking everyone to pay up-front, or by asking no-one to pay up-front.
That way he doesn't have to justify why certain groups are asked to pay before their meal and others can pay after their meal.

I have to disagree. If I have a meal and it turns out to be terrible, what do you think my chances are of getting my money back if I've paid up front ?

You enter into a contract with the restaurant when you order the meal. The quality of the food or service doesn't really come into it. I doubt if anywhere would refund any or all of your money irrespective of when you pay, and they would have the police on their side if they are called. A later letter to the management might in some cases result in a slight refund or voucher for future use.

Sorry,I'm not buying that. Most contracts state "must be of suitable quality" or something similar. If I deem a meal to be unsuitable I would ask for at least a partial refund. I've done so before, and yes the police were called but I walked out the door a free man. I hope the other diners spread the word about the incident and damaged the reputation of the restaurant.

You wouldn't expect McDonalds to let you pay later, and that's how Pizza Hut would have to operate if they wanted all their customers to pay up-front.
McDonalds don't say "I like the look of you, you can pay later, I don't like the look of you, you pay up-front". If they did they would soon find themselves in the same boat as Pizza Hut did in the case above.
